Lemon and chocolate chip butter biscuits
Ooh lemon and chocolate chip, just the thought of that combination makes me smile.
I was so excited to bring them together into a biscuit.
This is my own recipe cobbled together form a lemon and rosemary recipe and a bit of experimenting. You may like more or less chocolate chips and more or less lemon. try and see what works for you.
Th need to experiment is always a good excuse to make a second batch!
- 250g unsalted butter, at room temp.
- 1/2 cup of sugar
- 1/2 teaspoon vanilla essence
- 1 tablespoon lemon zest
- 3 tablespoons fresh lemon juice
- 100g chocolate chips
- 1 cup of flour
Cream together butter and sugar
Add lemon zest and lemon juice and vanilla essence and mix well
Slowly fold in flour and chocolate chips
Form in to a dough and cover in greaseproof paper and place in fridge for 30 mins
Remove form fridge roll out dough and press out biscuits with a cookie cutter.
Place on lined baking tray and into preheated oven at 190c for 15 minutes, or until golden brown
Place on wire rack to cool.
