Lemon and chocolate chip butter biscuits

Ooh lemon and chocolate chip, just the thought of that combination makes me smile.

I was so excited to bring them together into a biscuit.

This is my own recipe cobbled together form a lemon and rosemary recipe and a bit of experimenting. You may like more or less chocolate chips and more or less lemon. try and see what works for you.

Th need to experiment is always a good excuse to make a second batch!

Ingredients

  • 250g unsalted butter, at room temp.
  • 1/2 cup of  sugar
  • 1/2  teaspoon vanilla essence
  • 1 tablespoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 100g chocolate chips
  •  1 cup of flour

Method

Cream together butter and sugar

Add lemon zest and lemon juice and vanilla essence and mix well

Slowly fold in flour  and chocolate chips

Form in to a dough and  cover in greaseproof paper and place in fridge for 30 mins

Remove form fridge roll out dough and press out biscuits with a cookie cutter.

Place on lined baking tray and into preheated oven at 190c for 15  minutes, or until golden brown

Place on wire rack to cool.

 

Hope you enjoy these yummy biscuits. I like them best with an ice cold glass of milk or a refeshing elderflower cordial.

    These look so good, and they have Lemon in them. Hmmm I wonder if they would count as one of my five a day?
