Courgette fritters
As you know I am on a journey to learn to cook wholesome home-made veggie food for my family. This week I decided to try my hand at courgette fritters.
I have a fabulous foodie friend called Helen who writes at The Crazy Kitchen and she pointed me in the right direction of a good recipe of hers.
Helen’s recipe was actually for corn and pea fritters which look delicious and she helped me adapt it for courgettes
Courgette fritters
Ingredients for Courgette fritters
1 Large courgette (grated)
Handful of sweetcorn ( I used frozen and just sat it in boiled water for 2 mins)
50ml of butter milk
50g of plain flour
(I added a small handful of grated cheese too but this is totally up to you)
Method for Courgette fritters
Mix all the ingredients together
Heat some oil in a frying pan (and make it nice and hot)
Add a spoonful of batter and fry until golden brown then flip an do the same to the other side,
Simples.
I had mine hot and my husband had his cold for lunch.
Just delicious (far more so than they look!)
Variations ( I would substitute the ham and bacon for quorn varieties of each)
