Today I made rich leek tart.
I am scared of cooking.
I get panicky and anxious. I never seem to have the right ingredients in. I often over or under cook dishes. I despair of the mess. We are vegetarian and I cook a lot of quorn and processed foods like ready made pies. We eat a lot of veg, salad and fruit but still I worry I should be giving my family a better, tastier, healthier and less processed diet.

My good friend Chris Mosler is a food blogger and has offered to hold my hand as I learn to cook, answer my questions and provide me with some great recipes. We started out with one of her most popular dishes… Rich Leek Tart
Hers looked so god i was scared to try it! I did a specific shop for ingredients so I knew I had all I needed and I made sure I had a free afternoon. This all helped to reduce my anxiety as often it is rushing that stresses me out and puts me off cooking.
I gathered my leeks, butter, oil, pastry, cream, cheese, mustard, salt and pepper all together.
I found a little used flan dish, some baking paper and scales.
I took a deep breath.

I cannot begin to tell you how proud I felt..and it tasted absolutely lovely, creamy, rich and really light too.
My husband declared it the best thing he had ever tasted, and I grew some confidence.
