You could visit somewhere have always fancied visiting (perhaps another city) and have a lovely long weekend get away. Having a car means you could take in a few sights along the way and be totally flexible with your timing. A car for the weekend is the perfect excuse for a little trip away.
You could visit friends
How about a weekend visiting friends and dropping in for a catch up with old pals far and wide? I cannot think of much that I would rather do then spend some time with my friends after this year of isolation.
A car would make this much more do-able and help me visit friends that bit further away.
A family fun day
How about using the car to ferry your kids to a fun event like a festival or to a theme park or somewhere fabulous like the Harry Potter studios? I am sure if you ask them your kids will know exactly what to do with a car for the weekend.
