Vegetarian Healthy Midweek Dinners – Oh, it can be so hard to know what to cook midweek can’t it?

I have Sunday covered with a traditional nut roast; all the veggies, roast potatoes and Yorkshire puds! Saturday we have a huge brunch (all English) and Friday night is homemade pizza night in our house. But what to cook midweek? – especially when you are a family of vegetarians?

I have been doing some thinking though and as I love to cook to a meal plan I have nailed these down as firm family favourites and I thought I would share my ideas with you here. 

 

5 Vegetarian Healthy Midweek Dinners

Shiitake pho

Itsu have a gorgeous array of midweek healthy midweek dinners ideas and I have been inspired to give a few a try. My firm, stand out favourite is shiitake pho – a quick and tasty  pho that takes just 5 mins to prep and is ready in just 20 minutes. The recipe features itsu rice noodles, pan-fried shiitake mushrooms, and tender pak choi served in a rich pho broth.

Smokey ramen with tofu

15 mins to prep and 15 mins to cook – exactly what you need midweek!

This gorgeous ramen dish is infused with smoked tofu, sweetcorn, and a mix of chestnut shiitake mushrooms and broccoli, this recipe offers a smoky, savoury flavour twist to your traditional ramen bowls. It includes the itsu classic ramen broth and restaurant styled ramen noodles for a delicious meal for two.

Speedy Shakshouka

This is  always on my menu plan because It takes almost zero effort. I simply spray a pan with oil throw in a tin of ratatouille and make two wells. You simply track two eggs into the wells an leave it to simmer for about 10 mins. Serve with feta cheese crumbled on top and a mixed salad.

It’s perfect! 

 

 

 

Halloumi and salsa

Pan fried halloumi with delicious homemade salsa always goes down a treat. My homemade salsa is packed with healthy veggies. Served with flatbread and a green salad it’s quick midweek win.

 

 

Superfood salad

Super speedy too and packed with goodness; edamame beans, kale quinoa and shallots, pomegranates and broccoli combine into a taste sensation in this glorious dish. I serve this superfood salad it with oven baked tofu in a tamarind sauce.

Delicious and very simple.
