I have been a vegetarian for 32 years. My children and my husband are also vegetarian. I am not a confident or accomplished cook and yet most of the cooking does fall to me.
After many years of eating pretty much the same things week in week out I have decided I want to learn to cook. Simple beautiful tasty vegetarian food is what I am after. How bored we are of quorn and pasta with tomato sauce. Inspiration was needed!

Ive also been sent a lovely recipe book this month from Tibits the London and Switzerland based Vegetarian restaurants. Tibits was voted The Best Vegetarian Restaurant in the prestigious Cook Vegetarian awards in 2014 and has a wonderful reputation.
Their cook book has tantalizing photography and showcases some simple and achievable recipes that have really made my mouth water!

The Tibits at Home cookbook recreates some of their fabulous food and you can learn to make it in your own home. Oh how I need this!
The Tibits at Home book can be bought from any of the restaurants and is available from Amazon in hardback at £22. It is split into seasons and has over 50 recipes and it is definitely a beautiful book.

I love lentil lasagne!
I cannot eat Gluten and tend to find dairy a real problem too so cooking without meat as well is very difficult. However, I love vegetable crumble, using gluten free flour and a dairy free ‘butter’ and with home made veg stock (made from various bits of veg left in water in a slow cooker for 2 days).

I love something simple, hearty and easy to prepare. My current favourite for these colder months is a lovely vegetable and barley broth. Served with some crusty bread – perfect!

My favorite (at the moment anyway) has to be chestnut and goat’s cheese tarts. SO unhealthy, but too gorgeous to not eat. Plus freeze brilliantly.

I make a lovely veggie casserole in the slow cooker with all the root vegetables like parsnips, butternut squash and carrots.

Mushroom Curry. Batch cook it so always a few for the freezer. Ideal ‘readt meal’.
My fave veggie dish a broccoli and cauliflower bake, which is broccoli and cauliflower cooked in a puff pastry with white wine sauce and cheese. <3
Having a vegetarian daughter we’ve gradually added to our meal plans more of a focus on Vegetarian dinners for the whole family. Probably our favourite is a mushroom risotto!

I love many veggie dishes but after spending lots of time in India around my mother-in-law who is an amazing cook, I would have to say her Makhani Dal served with roti and raita (made with homemade curd, apples, tomatoes, cucumber, onion, boondhi and lemon juice) is the most delicious. It’s simple traditional food but sooo tasty!
